Have I mentioned our new waffle maker yet?
I’ve always been a fan of breakfast foods, especially stuff like pancakes and waffles, but being gluten-free makes it more difficult to go out and enjoy these foods. That’s why I was so excited when Ben brought home a waffle iron for our 3rd wedding anniversary! The moment I opened the gift I started experimenting to find a recipe that tastes delicious and is nutritious – dense enough to fill you up, yet crispy and satisfying.

Gluten-Free Waffles

[Ingredients]
- 1 1/2 c oat flour [I just ground gluten-free oats in a high-speed blender]
- 1/4 c almond flour
- 1/4 c coconut flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp finely ground sea salt

- 3 large eggs
- 1/4 c softened butter/earth balance/unsweetened applesauce – depending on your diet
- 2 c vegan buttermilk [place 2 Tbsp apple cider vinegar in a measuring cup, then fill to the 2c mark with non-dairy milk]

In a large bowl, whisk or sift dry ingredients together.
In a separate bowl, mix all wet ingredients.
Pour wet ingredients into the dry and combine with a few quick strokes of the whisk (the batter should be slightly lumpy).
Ladle onto your waffle iron until desired doneness.
Enjoy! Makes about 8 waffles, depending on the size of your iron.
