Today I’m filled with hope and the wonder of possibilities. I’ve cancelled all plans this weekend (except to see my cousins because Lance is leaving so soon) so that I can catch up with grad school work and re-root my soul. Hopefully that means you’ll be seeing some ‘ono recipes next week!
Speaking of ‘ono recipes, here’s another incredibly simple, incredibly delicious recipe from Moosewood Cooking for Health. This simple tofu has wonderful texture and flavor and gave us a quick boost of vegetarian protein! The only adaptations I made to were to reduce the amount of oil and use Bragg’s liquid aminos instead of soy sauce. Honestly, I don’t think you could go wrong with this one.
We make sure to buy tofu that is made from organic, non-GMO soybeans, but we don’t eat soy too often because it has high levels of estrogen, which can really alter an individual’s hormone levels.
Simple Baked Tofu
- One block tofu [about 18 oz.]
- 1 to 1 1/2 tsp sesame oil [dark variety, if you have it]
- 2 Tbsp ketchup
- 2 Tbsp Bragg’s or soy sauce
- 1 small garlic clove - minced
Preheat the oven to 400 degrees.
Cut tofu into bite-sized cubes.
Drain the tofu by wrapping a towel around the tofu and squeezing until much of the liquid is released (you may need to repeat this step).
Stir together the rest of the ingredients in a bowl.
Place tofu on a baking dish in a single layer and pour the mixture over the tofu – using a brush to coat each piece well.
Bake for about 40 minutes (stirring half way through) or until the sauce has begun to caramelize and the tofu is firmer.
Enjoy! Makes 6 30z servings.
Topping ideas: green onions + sesame seeds.
